Ingredients:
For the pavlova:
  • Egg whites 225g Caster sugar – 1tsp Corn flour 1tsp – White wine vinegar
For the assembly:
  • 50ml Whipped topping, 1 Vanilla pod, Zest of 1 lemon 250g Semi-ripe mangoes, sliced 200g Kiwis, sliced 1tbsp Icing sugar (optional).

Method For the pavlova:
  1. Begin by preheating your Siemens oven to 150°C.
  2. Line a baking tray with parchment paper or use a silicone sheet.
  3. Beat the egg whites in a large mixing bowl using an electric whisk until shiny white peaks form.
  4. Gradually add the sugar, one tablespoon at a time, whisking continuously until the mixture turns glossy and forms firm peaks.
  5. Dissolve the cornflour in the vinegar and gently whisk it into the mixture, taking care not to overwork it.
  6. Transfer this mixture onto the lined baking tray, gently smoothing it into a round mound with a flat top using a palette knife, or use a piping bag and get creative with the design.
  7. Lower the oven temperature to 120°C and bake the pavlova for 1 1/2 hours. It should emerge glossy and firm to the touch.
  8. Turn off the oven, and leave the pavlova inside until it cools down to room temperature.
    Carefully peel off the parchment paper or silicone sheet and transfer onto a serving dish.

For the assembly:
  1. In a large mixing bowl, whip the topping until it doubles in volume. Stir in the seeds from the vanilla pod and the lemon zest.
  2. Spoon this mixture over the pavlova, spreading it evenly to cover the top.
  3. Finally, arrange the slices of mango and kiwi on top. Dust with icing sugar and serve immediately to enjoy the best mix of flavours and textures.

This recipe serves between four to six people, making it an ideal finish to a family meal or a small get-together. If you need more or less, simply adjust the quantities to fit your needs.
